    3rd try making sourdough starter. Using whole grain. Getting lots of bubbles, fluid then yellow on the bottom. So, I’m I to scrape aside all the bubble mass and use just the bottom yellow? Not much there. Thanks

        I have been using your einkorn berries this past year, and I am learning and trying new recipes. Our tummies love einkorn! I am incorporating “everything einkorn sourdough” to help with digestion. So far I have milled the berries in our grain container on my Vitamix, which works great for my husband and I. Sourdough einkorn bread, waffles, muffins, cakes, and porridge are on our menu! Thank you for providing USA grown einkorn!

      Hi, love love love my Einkorn! I use a home mill and keep a sourdough starter going, but have much to learn. One question I have been wondering about, my husband has been eating oatmeal daily in an attempt to lower his cholesterol. I have encouraged him to eat einkorn instead, feeling it would more than likely be more nutritious, and more effective in lowering cholesterol than the oatmeal. Is there any research out there?

            Hello, no we do not use any pesticide or herbicides at any stage of the process.

      If you go to jovialfoods.com, there is an excellent video and recipe for making the starter and also levain and bread. Really good instructions. Been making the bread for several months now after I made the starter.

    I feed every week. I try to feed and increase the amount of starter I need the day (12-24 hrs) before starting the bread…

    I pull it out of fridge 6-10 hours before I start mixing with the flour(s) if I did not get the opportunity to feed and increase amount of starter the day or two before….

    I have allowed the autolayse to work up to 36 hrs before baking …. amazing flavours❣️… I Love Einkorn…

    I just received Whole Grain Einkorn flour, (2) 5# bags. Should the flour be stored in the freezer or refrigerator until time to use? So anxious to try out recipes. I did make some kefir-soaked sourdough bread. So delicious. Thanks.

      Hello, either one is fine. It just depends how quickly you think you’ll use it. Just make sure they are in an airtight container.

    We have been using All Purpose Einkorn flour for years and this is the first I have heard that I can get the wheat berries! I have my own grain mill that I use for Prairie Gold wheat berries, Spelt and Kamut berries. I notice you have a sifter available. What is the advantage of a sifter?

      Hi Bettie, a sifter just removes some of the larger particles to acheive a lighter flour. Honestly, we hardly every use one because we don’t want to miss out on all the nutrients, but those who want something a little closer to all-purpose may want to use one.

      Hi LaCinda, Yes, einkorn does great with cakes, but you may want to start with cake recipes written for einkorn as it doesn’t behave exactly the same as modern wheat. The liquid content is usually less.

    Hi,
    I’ve used your einkorn berries for a long time. The taste of the sour dough and flavor of freshly ground whole berries can’t be beat. My question is about grinding the whole einkorn. I’ve wondered if the oils in the einkorn grains might glace the stone quickly? My Milrite, which I’ve had for 40 years has been incredable and dependable, but the stone had gotten so glazed it was far to slow. I also have replaced the stone not to long ago. Do you do anything to your stone to keep them functioning well? I switched to a steel burr but the flour is so much coarser that I can’t really use my lame for slashing the bread, the chunkiness of the grain in the bread gives a very coarse look to the slash on top of the bread. The bread itself tastes fabulous and has a good texture, I just need a finer flour size to have an elegant look to my artisan bread. Thank you!

      Hi Eleanor, I’ve never seen the oils in grain glaze stones. I’ve seen nuts or sugars do that. Also, if your stones get too hot, this could happen. Einkorn has done well in every grain mill I’ve tried it in. I have a stone mill that I’ve been using for einkorn for three years and have never had a problem. I am sorry to not be more helpful. If your mill does get too hot, you could consider grinding in smaller quantities before resting it.

    Hello. Ive been making bread with Einkorn AP flour for 2 years. FINALLY got a grain mill (wooohoooo!!!)
    and have been making the sandwich loaf with Whole grain.. right after milling. I just can’t get a good rise on this loaf. Don’t know how to correct this problem.. help please!!! Thank u😊

      Hi Ronie, thank you for your question. Not being in your kitchen, it’s hard to know exactly what you could change. One thing that’s important with einkorn is not to overflour. It’s best if it’s wetter or stickier than you’d think. It’s difficult to work with but it rises better. Einkorn takes longer to absorb liquid than modern wheat. Also, don’t let it rise too long. You don’t want it to peak before you put it in the oven. I generally let sandwich bread rise 30 minutes in the bowl and then another 30 minutes in the pans in a warm place. Other kinds of bread may differ, but that shuld give you an idea.

    I recently (Jan 2021) purchased 2 bags of this flour – 1 for me and 1 for my sister who is a master bread maker. We both made bread right away and the results are in: WONDERFUL ! Easy to work with, super great taste, and at least a 5 day counter-top “life”. We both froze one loaf as an experiment – see how it tastes in a few days.
    I would like to compliment this company for their FAST service – they are in Idaho, I am in Kentucky and my sister in northern New York State. We both got our flour in 2 days – unbelievable seeing as I am still getting Xmas cards from USPS.
    Also the bag the flour came in is stamped with date of milling, bag itself VERY sturdy.

      Hi Linda, thanks for the great question. GMO is not the issue with wheat. Even modern wheat is not genetically modified. The issue with modern wheat is that it has been hybridized. Einkorn has never been hybridized and only has 14 chromosomes (Modern wheat has 42). All our einkorn is true einkorn and has not been hybridized with other grain. I hope that helps.

      Hi Alicia, thanks for the question. We are not currently selling seed. All the einkorn we generally sell has had the hull removed so it can be used for food.

    How much protein is in the eikorn. My husband has been looking at flourish flour because of the high protein in it.
