Einkorn Chocolate Beet Cake

Ingredients

  • 1 1/2 cups Steamed Beets 2 medium to large beets
  • 3 whole Eggs
  • 1 1/2 cups Sugar or coconut sugar or sucanat
  • 1/2 cup Melted coconut oil
  • 1/4 cup Applesauce
  • 1 teaspoon Vanilla
  • 1/4 cup Cacao Powder
  • 2 cups Einkorn Flour Freshly Milled is best
  • 1 1/2 teaspoons Baking Soda
  • 1/2 teaspoon Real Salt

Chocolate Butter Cream Frosting

  • 1 cup Butter You may use coconut oil but will need to add a little salt.
  • 3-3 1/2 cups Confectioners Sugar
  • 3 tablespoons Heavy Whipping Cream
  • 1/2 cup Cocoa or Cacao Powder
  • 2 teaspoons Vanilla

Directions

  Cake:
  1. Blend beets, eggs, sugar, coconut oil, applesauce and vanilla in a blender.
  2. In a bowl, mix cacao, einkorn flour, coconut flour, baking soda, and salt.
  3. Mix wet and dry ingredients until well mixed.
  4. Pour into greased 9x13 pan or you can use round pans and make it a layered cake.
  5. Bake at 350° for about 35 minutes (If the pan is glass it may take closer to 45 minutes).
  6. Top with anything you like or use the frosting recipe below!
Chocolate Butter Cream Frosting:
  1. Mix all frosting ingredients with a hand mixer until smooth.
  2. Frost cake when cooled.
