Einkorn Oven Puff Pancake

1 dozen

Ingredients

  • 6 Eggs
  • 1 cup Milk
  • 1 1/2 cups Whole Grain Einkorn Flour
  • 1/4 teaspoon Salt
  • 1 tablespoon Vanilla
  • 1 tablespoon Ground Cinnamon
  • 3 tablespoons Butter

Directions

  1. Preheat oven to 450 degrees.

2. Put butter in a 9×13 pan or casserole dish and put it in the preheated oven.

3. Mix remaining ingredients in a medium mixing bowl.

4. Take pan out of oven when butter is melted and bubbly.  Pour the wet mixture into the pan and return pan to the oven. Bake for 18 to 20 minutes or until the pancake is puffed up and golden brown.

5. Cut and serve with maple or berry syrup.

      Hi Chelsea, you can use all-purpose flour, but the amount may vary slightly. We don’t have an exact conversion. You’ll just want to watch consistency.

    I just made a version of this earlier in the week. I just got my einkorn berries and ground a good amount to experiment with. I just followed a recipe for a Dutch Baby and used the Einkorn and it was really good. I haven’t had a dutch baby before, so I had nothing to compare it with, so we enjoyed it

      Hi Schuyler, I haven’t tried it but I wouldn’t hesitate to. I have found that almond milk generally works great as a substitute in baked goods.
