Einkorn Pumpkin Cookies

You will love the warm, fall flavor of these delicious pumpkin cookies. Don't forget the chocolate chips!

Servings

4 1/2 dozens

Ingredients

  • 2 cups Pumpkin (Or other winter squash) puree
  • 2 Eggs
  • 1 tablespoon Vanilla
  • 1 1/2 cups Honey
  • 1 cup Butter Softened
  • 1 tablespoon Cinnamon
  • 1 teaspoon Nutmeg
  • 1/2 teaspoon clove
  • 2 teaspoons Baking Soda
  • 2 teaspoons Baking Powder
  • 1 teaspoon Salt
  • 6 cups Whole Grain Einkorn Flour 3 cups whole einkorn berries
  • 1 package Chocolate Chips Optional

Directions

  1. Combine everything but flour and chocolate chips.
  2. Add flour while mixing (We just put three cups of einkorn berries into our mockmill and let it mill directly into the bowl while it’s mixing)
  3. Add chocolate chips and mix.
  4. Spoon onto greased baking sheet or baking sheet with parchment or silicon mat.
  5. Bake at 350° for 15 minutes.

    I would love to try to make these cookies as gifts for two neighbors. The husbands have diabetes mellitus. Can I substitute 1 1/2 cup monk fruit sweetener for the 1/1/2 cup honey??

      Hi Diana, I have never used monk fruit sweetener. If the consistency is similar to honey and you’ve used it as a substitute before, I’m sure it would be just fine.

    What is the weight of one cup of the Whole Grain Einkorn Flour? I prefer measuring flour by weight than by volume. Thanks!

      A cup of freshly milled einkorn flour will weigh about 3.5oz. Of course, if your flour has been sitting, it may be different. If we are using whole grain in a recipe, we grind it ourselves and that’s what it comes to.

    May sound like a silly question but purée is made of cooked (boiled? Baked? Microwaved?) pumpkin?

      Hi Rita, you can use canned from the grocery store or make it yourself. I would bake it and then puree it in a food process or high power blender. I haven’t tried boiling or the microwave, but it could work.
