Einkorn Vanilla Wafers

The classic snack cookie meets einkorn, and what a team!

Servings

Ingredients

  • 2 cups All-Purpose Einkorn Flour
  • 1 teaspoon Baking Powder
  • 3/4 teaspoon Salt
  • 1/2 cup Butter softened
  • 3/4 cup Sugar
  • 2 tablespoons Vanilla Extract
  • 2 Eggs

Directions

  1. Preheat the oven to 350 F.
  2. In a medium sized bowl, cream the butter and sugar together.
  3. Add the eggs and vanilla extract, and mix.
  4. Sift the dry ingredients onto the creamed mixture.  Mix just until combined.
  5. Refrigerate the dough for about 10 minutes.
  6. Line a cookie sheet with parchment paper.  Fill a piping bag with the mixture, and pipe round disks onto the parchment paper about the diameter of a quarter.
  7. Dip your finger in some water and flatten the tops of the cookies.  This helps to give them a smooth shape.
  8. Bake for 15-18 minutes or until golden brown on the edges.
  9. Cool the cookies on a cooling rack for 30 minutes.

    Do you have printer-friendly versions of your recipes?
    AND
    When you say “All Purpose Einkorn Flour” would that mean the freshly ground flour made from Einkorn berries?

      Hi Kathy, we haven’t developed printer friendly versions. If it were me, I’d just copy and paste into a word document and print that way. All-purpose refers to a white einkorn flour that has had the bran and the germ removed. We aren’t currently offering it. It’s what was used when this recipe was developed, but I personally wouldn’t hesitate to try it with whole grain flour. You could do some sifting if you wanted something that more closely approaches all-purpose.

      If there isn’t a printer friendly version just highlight the web text, copy/paste it into your word processor. From there you can format if desired, and print. If you look up how to create hyperlinks you can create an index to jump to your favorite recipes and create your own cookbook!

      I selected print on my computer and looking at the pages was able to see that page 3 prints the recipe minus the words I had wrote “Einkorn Vanilla Wafers” I also hand write the web site when it does not show.

    Do you have a nutrition breakdown for these? I’m making these for the grandchildren but I don’t need a lot of extra calories for myself.

      Hi Tom, we haven’t figured out the nutrition information for these. There are some websites where you can plug in the ingredients and it will estimate it for you. I would try googling “nutrition calculator” or something like that.
