Einkorn Pumpkin Cookies

Ingredients

  • 2 cups Pumpkin (Or other winter squash) puree
  • 2 Eggs
  • 1 tablespoon Vanilla
  • 1 1/2 cups Honey
  • 1 cup Butter Softened
  • 1 tablespoon Cinnamon
  • 1 teaspoon Nutmeg
  • 1/2 teaspoon clove
  • 2 teaspoons Baking Soda
  • 2 teaspoons Baking Powder
  • 1 teaspoon Salt
  • 6 cups Whole Grain Einkorn Flour 3 cups whole einkorn berries
  • 1 package Chocolate Chips Optional

Directions

  1. Combine everything but flour and chocolate chips.
  2. Add flour while mixing (We just put three cups of einkorn berries into our mockmill and let it mill directly into the bowl while it's mixing)
  3. Add chocolate chips and mix.
  4. Spoon onto greased baking sheet or baking sheet with parchment or silicon mat.
  5. Bake at 350° for 15 minutes.
