I was sold after my first order of Einkorn whole grain flour and I will never use “regular” whole wheat flour again. There is just no comparison in flavor or consistency in the baked goods I make. I originally bought it for sourdough bread. It was so delicious, family and friends asked me to make more. Same for pancakes and other recipes. I have tried various packaged Einkorn flours from our local health food markets, but this one is is far superior. I always disliked the flavor and consistency of whole wheat flour. Spectacular. Honestly, the best tasting flour I’ve ever used. I heard about Einkorn some time ago, but only managed to get some recently. I had read some articles which noted how fussy einkorn is, particularly with moisture (both humidity and in the recipe itself). So I was cautious about using it at first. I had nothing to worry about. I used the whole wheat in several recipes– bread, coffee cake, and banana bread. All were incredibly light, easy to work with, and some of the most flavorful I’ve ever used. My entire household struggles with diabetes– mom and I are pre and hubby full blown. When he tested his blood sugar the next day, we were expecting it to be off the charts. If anything, it was lower. Einkorn is a resistant starch. It doesn’t spike blood sugar. And, when included in a balanced diet, like beans, einkorn can lower blood sugar. It’s also got a decent amount of protein in it, so for the first time ever– one slice of an einkorn baked good is enough. It’s satisfying and filling and I can’t recommend it enough. I also bought the whole einkorn berries, which are also spectacular.

Since the all purpose is out of stock, I had to get the whole grain einkorn, and while it is good, and I’m so thankful to be able to get it, I prefer the all purpose einkorn. The whole grain does do good for baking, but for frying, I like the all purpose. Whole grain is still a great option though when the all purpose can’t be purchased.

I’ve been baking with einkorn now for half a year (no grains for almost 3 years before that) because of a lack of tolerance to grains. I tried one of the competitor brands to see how I would like it. The bread that came from that brand was great but the einkorn from einkorn. com freshly milled… it took it up about 10 notches! I love baking with this einkorn and I finally got brave enough to create my own sourdough yeast. First batch from the competitor brand failed but the batch I started with the freshly milled einkorn went crazy. It pretty much doubles every day in size.
