    This is a lovely cookbook. Full of knowledge from someone who has worked with Einkorn and knows its ins and outs. Easy to follow recipes. Utensil and pan suggestions. A treatise on Einkorn, an ancient wheat, compared to modern wheat. Beautiful photographs throughout.

    I have experimented with Einkorn grain and flours for the last 12 years. Many of the recipes worked out by Katie Koyle are similar to those I have worked out. There are many recipes in the book with which I have not experimented; and am now looking forward to trying. Many of the recipes call for all-purpose Einkorn flour. I grind my own so have whole Einkorn flour. Occasionally, I have sifted the flour to remove much of the bran (which gets saved for Bran muffins). If I were cooking in bulk, I would definitely buy the all-purpose Einkorn flour. There is a difference in how much to use of the whole Einkorn versus the all-purpose Einkorn flours. The book goes into good detail of the differences.

    This book is definitely worth the investment if one is starting to exploring Einkorn; would make an excellent gift for the budding baker; or a great reference book for those of us who have also been experimenting with Einkorn grains and flours.
