Legit! Not only am I 100% Italian, but I’m also a bit of an Einkorn Connoisseur. There’s an Einkorn plantation by me, and they grow, grind, and make their own sourdough bread. Alas, they do not make pasta! Citing that although they’ve tried, the process has proven to be rather unpredictable. Grand Teton kitchen scientists to the rescue! I just received my spaghetti in the mail today (after ultra-fast free shipping, btw), and I promptly boiled up a half bag (~1lb), and ate it all down in 30 minutes flat! Zero bloating, zero symptoms of any kind … oh, and it was deeelicious! I was previously a Jovial customer; they’re also good, but I believe in supporting small American farmers, rather than a large multi-national. The owner and founder of Grand Teton was on the Homesteading Family podcast / YouTube, and after listening / watching that, I placed my order the next day. So lovely to have a pasta that I can enjoy, that tastes good, and does not cause digestive upset. Einkorn Spaghetti is a wonderful new product. I have experimented with Einkorn grain and flours for the last 12 years. Have not been up to the task of investing in a pasta machine and making my own. Very happy that Einkorn.com has undertaken that endeavor. Cooking time of 5 minutes suits my taste. Served with a traditional red sauce with Sweet Italian Sausage, mushrooms and finely sliced kale; the sauce clings to the pasta, coating it evenly. Easy to twirl onto a fork using a tablespoon. Just beginning to experiment with the Einkorn Spaghetti. The 2 pound bag with 16 servings makes for easy experimentation. Will definitely purchase again.
