We made this organic einkorn Harvest Pasta for the same reason we make every other cut: we wanted a clean, flavorful pasta for our own table, grown and milled on our family farm from God’s original wheat.

Harvest Pasta is our seasonal short cut: a mix of sunflower-shaped and einkorn wheat-shaped pieces, bronze-cut and slow-dried from stone-milled einkorn semolina. The shapes look like they belong on a fall table. They also work all year in soups, salads, skillet dinners, and weeknight bowls.

Why These Shapes Work

Short pasta with open petals and wheat-ear ridges gives sauce more to hold onto. The sunflower pieces catch pesto, brown butter, and roasted-tomato sauce. The einkorn wheat pieces add a little chew and look right in minestrone, chicken soup, or a harvest pasta salad with squash, kale, and toasted nuts.

Stone-Milled On-Farm for Whole-Grain Flavor

After harvest, we stone-mill the einkorn ourselves. Modern roller mills heat the grain and strip it down. Our stones turn slowly and keep the bran, germ, and endosperm in the flour. This is true whole-grain einkorn semolina, then shaped in our small pasta room.

Why Bronze-Cut Matters

Italian bronze dies rough the surface so sauce clings instead of sliding off. That matte, slightly dusty look on the uncooked pieces is the point. Combined with slow drying at low temperatures, the pasta keeps einkorn’s nutty-sweet flavor and a firm bite when you do not overcook it.

Einkorn Is Easier to Digest for Many

Einkorn has a simpler gluten structure than modern wheat. Many customers who feel heavy after regular pasta tell us they feel better after ours. That is their experience, not a medical claim. Important Cooking Tips

Einkorn pasta is more delicate than conventional pasta. Follow the bag and you will get a better bowl:

1. Use a large pot and plenty of water. Cook about half a bag at a time.
2. Do not stir for the first 45–60 seconds. Then stir gently 2–3 times only.
3. Start checking for al dente at 5 minutes. The bag range is 5–8 minutes. Do not walk away.
4. Drain and toss with sauce right away. Einkorn gets sticky if it sits bare.
