  1. Hello!

May sound like a silly question but purée is made of cooked (boiled? Baked? Microwaved?) pumpkin?
    Thank you
    Rita

    1. Hi Rita, you can use canned from the grocery store or make it yourself. I would bake it and then puree it in a food process or high power blender. I haven’t tried boiling or the microwave, but it could work.

    1. A cup of freshly milled einkorn flour will weigh about 3.5oz. Of course, if your flour has been sitting, it may be different. If we are using whole grain in a recipe, we grind it ourselves and that’s what it comes to.

These turned out amazing! Made these vegan. Maple syrup instead of honey, avocado oil instead of butter, flax egg instead of egg. Nice taste and consistency.

  2. I would love to try to make these cookies as gifts for two neighbors. The husbands have diabetes mellitus. Can I substitute 1 1/2 cup monk fruit sweetener for the 1/1/2 cup honey??

Thank you for your help. Diana Sarkar

    1. Hi Diana, I have never used monk fruit sweetener. If the consistency is similar to honey and you’ve used it as a substitute before, I’m sure it would be just fine.
